Ingredients to make Palak Dal Khichdi
Rice – 1/2 cup
Moong Dal – 3/4 cup
Spinach leaves – 1 cup
Tomato – 1
Ginger-garlic paste – 1/2 tsp
Onion chopped – 1/2
Green chili – 1
Dry red chili – 1
Bay leaf – 1
Cumin – 1 tsp
Cinnamon – 1 inch piece
Turmeric – 1/4 tsp
Desi ghee 1 tbsp
salt – as per taste

How to make Palak Dal Khichdi
If you want to make Palak Dal Khichdi for lunch or dinner, first clean the rice and moong dal and wash them with water two to three times. After this finely chop tomatoes, onions, spinach and green chillies. Now take a pressure cooker and put rice and moong dal in it and add 3-4 cups of water. After this add turmeric and a pinch of salt and cook till 4-5 whistles come. After this, turn off the gas and let the pressure of the cooker release on its own.

Now put desi ghee in a pan and heat it on medium flame. When the ghee melts, add cumin, bay leaf, dry red chili and cinnamon and fry for a few seconds. After this add finely chopped onion and fry it too. Fry the onion till its color turns light brown. After this add ginger-garlic paste and finely chopped tomatoes and cook. Cook this mixture till the tomatoes become soft.

Meanwhile, grind the spinach in a mixer and prepare its puree and take it out in a bowl. Add the prepared puree to the onion-tomato masala and cook until the color of the spinach changes. Now open the pressure cooker and take out the cooked lentils and rice and put them in the pan. Along with this, add 1 cup of water and a little salt and let it cook for 3-4 minutes. When the khichdi and spinach mix well, turn off the gas. Tasty palak dal khichdi is ready for lunch or dinner.
